So you want something to keep it's color and the rest be black and white?
let's start with something simple
We're going to do this with the Fruit

First Go to Adjust>Color box and select the area you want to keep colored.
It should look like this now

Next, Go to Adjust>Color Spotting
select the color you want to keep, normally if your colors are all shaded and the same you might have to do the same thing with the same picture in your clipboard, But I'm doing this the easy way, if you like the way it looks and you think you are finished, go from there and do whatever you want to do with your Photo.
